Small Plates, Craft Beers & Holiday Cheers

We have just put the finishing touches on our winter season menu at Vail Cascade and it’s been an incredible process! The new Small Plates menu is designed for après ski or lighter dining while providing a full culinary experience without consuming an overwhelming amount of food.  Pair these tapas-style dishes with a wide variety of craft beers for the perfect combination!  Which leads us to something else that is really neat at Vail Cascade……

The culinary team has been working extremely hard on a new exciting adventure! Our new craft beer initiative is a project near and dear to so many of us at Vail Cascade and we’re pleased to offer this one-of-a-kind selection at Fireside Bar and Atwater on Gore Creek, starting in mid-January. We recently visited Breckenridge Brewery in Denver and Avery Brewing Company in Breckenridge for an educational experience. It was a real eye opener to sit across from a person who has the same thought process towards a beverage (beer) as culinarians do towards food.  

For a few pairing suggestions, try our Saku Tuna Tacos with Mirror Pond Pale Ale or the Moroccan Lamb Meatballs with the Sam Adams Winter Lager. If you are looking for a dessert, try the Chocolate Mousse Cake with Three Philosophers. No self respecting Chef could resist the temptation to suggest the Pork Belly Lettuce Wraps paired with Hoegarrten.
