Brewmaster’s Weekend: Showing off Fresh Ingredients of Summer

Vail Cascade hosts Brewmasters Weekend with Upslope Brewing Co.

The Upslope Session Pale Ale inspired light, fresh flavors from the get go. Filo, seafood and black currants were the inspiration for Chef Chris Bates of Atwater on Gore Creek, and when the team circled back around to finalize the dishes there were several different format changes before the final Herb Crusted Alaskan Cod was pulled together with red currants and a peach champagne coulis.

Upslope Craft Lager was termed “all-American” by Chef Adam Smith, and an All-American Corn Dog with summer seasonal, house-made condiments became the vision.  Home-made yellow tomato ketchup, fresh peach chutney, and whole grain mustard will round out the picture. Sounds like ballparks and local fairs from around the country, so everyone can share this vision.

Upslope’s Belgian Pale Ale has aromatics and flavors that took the chefs all over the world with inspiration- Chef Jay Spickelmier to Japan, Chef Bemis to Mexico, Chef Smith to Greece, and Chef Bates to India -  before settling on a very American summery BLT, well…”TLT”. With a vision of crispy, cold fresh lettuce, & heirloom tomatoes together with smoked organic turkey on a cold plate, Chef Todd Bemis proposed a chimichurri mayonnaise and gooseberries to tie it all together.

Sharp cheddar cheese led the discussion for the Upslope Imperial IPA.  Sweet onions and grilled peaches weren’t too far behind.  The popover was Chef Bates’ contribution, and it all evolved from there.  Imperial IPAs aren’t always leaning toward dessert like stouts might, but these flavors all resonated for the team and the discussion was merely presentation from that point forward.

Head Brewer of Upslope Brewing Co, Alex Violette, will be offering a guided tour through these four Upslope craft beers in coordination with the Atwater on Gore Creek culinary team. Ingredients and inspiration will be discussed throughout the event, formally between each course and more informally as the chefs and Brewmaster visit each table.
